From Luke's upgrade from 2 260s to a 570, I can tell you that THAT comparison, the 570 wins. I do not think a 570 would beat 2 285s though, other than the fact that the 570 can do DX11 of course.

I upgraded from 2 285 Classifieds to a GTX 580 Black Ops Edition, and the 580 outperformed the 285s by itself in every game I played. So you may experience a slight performance loss, but you're gonna be able to turn on eye candy that doesn't even work on the 285s... so it's a give and take.
